Servaes Brewing Company
About
Servaes Brewing Co., pronounced like service, is a brewery and taproom in downtown Shawnee founded by head brewer Courtney Servaes. She began homebrewing in 2012 with a few friends, a propane burner and a kettle. She went on to brew hundreds of beers, took part in the Lawrence Brewers Guild and won awards for her homebrew. After a crowdfunding campaign, the 6,000-square-foot brewery opened on April 20, 2019. It was the first brewery in Kansas with a woman as owner, operator and head brewer. A 2023 expansion called The Mosaic Room doubled the taproom. In 2024 Servaes opened a second brewery in Atchison, Courtney’s hometown, in an 1887 railroad freight depot listed on the National Register of Historic Places. The brewery focuses on hazy IPAs, novelty beers, barrel-aged beers and sours, sometimes brewed with whole pies or cookies. It also makes Aaron’s Craft Soda, a line started by Courtney’s son.
