Center Pivot Brewery

Center Pivot Brewery is a locally run brewery and restaurant in downtown Colby, in northwest Kansas, owned by Steve and Ericka Nicholson. Steve spent decades teaching life sciences, but his real passion was homebrewing. It began in the early 1990s through a friendship with a fellow coach, Dean, whom the brewery calls its godfather. Dean’s influence shows throughout the building, including a live-edge black walnut bar. Ericka grew up on family farms north of Quinter and learned scratch cooking and baking from her mother and grandmother. The couple opened Center Pivot on Main Street in Quinter and later moved it to Colby. They say the business is about honoring the land and community and helping northwest Kansas economies thrive. The kitchen serves smash burgers, handcrafted pizza, salads and seasonal specials alongside the house beer and other Kansas craft beers, and it is a stop for travelers on Interstate 70.
