Drop the H Brewing Company is a craft brewery and pizza restaurant in Pittsburg. Its name comes from local history: the city was named for Pittsburgh, Pennsylvania, but dropped the H in the late 1800s. Owner Mark McClain went to high school in Germany, then became an Air Force KC-135 pilot and spent decades building backyard biergartens and pouring his homebrew for friends and family. Before going pro, he completed the Siebel Institute’s brewing certificate, studied the business of beer at the University of Vermont, and trained at Goodfellas Pizza School of New York. His wife, Cathy McClain, flew the same aircraft in the Air Force and later directed programs at Boeing and Spirit AeroSystems before founding an executive coaching company. The kitchen makes its dough and sauces in-house and bakes New York-style pizza in a brick oven.
